Matcha Potage
Ingredients:
Soy milk: 6.8oz (200ml, can be substituted with milk)
Sweet potato: 80g
Shirodashi (white soy sauce base): 1/2 tablespoon (7.5ml)
Mirin: 1/2 tablespoon (7.5ml)
Matcha powder: 2.5g
Instructions:
Steam the sweet potato, then place it in a blender along with all the other ingredients. Blend well until smooth.
Refrigerate for about an hour to let the flavors meld, then it’s ready to serve.
Matcha Lemon Dressing
Ingredients:
4 tablespoon (60 ml) of matcha paste base
1 tablespoon vinegar
1/2 teaspoon salt
1 teaspoon sugar
1/2 tablespoon olive oil
Suitable amount of lemon juice
How to Make the Matcha Paste Base:
Sift matcha powder and put 0.1 oz (2 g) in a bowl.
Add 2 teaspoon (10 ml) of hot water and whisk until smooth. Then add 3.5 tablespoon (50 ml) of hot water and whisk again.
When the surface becomes creamy, your matcha paste base is ready to use.
Instructions:
Put all the ingredients into a bowl or similar container, mix well, and it's done!
