Matcha Pudding
Ingredients: Makes 6 Ramekins Matcha powder: 6g (0.21oz) Milk: 400ml (13.5oz) Honey: 80g (2.8oz) (Granulated sugar can be used as a substitute) Gelatin powder: 5g (0.18oz) For a richer flavor, you can replace half of the milk with heavy cream. Instructions: Soak the gelatin powder in a small amount of milk (taken from the 400ml). In a microwave-safe container, combine the matcha powder, remaining milk, honey, and soaked gelatin. Matcha Green Smoothie
Ingredients:
Banana: 1
Komatsuna (Japanese mustard spinach): 30g (1.05oz)
Matcha powder: 1.7g (0.06oz)
Sugar: 8.5g (0.3oz)
Soy milk: 150ml (5oz)
Instructions:
Peel the banana and break it into smaller pieces. Trim the roots off the komatsuna and roughly chop it.
Place all the ingredients into a blender and blend until smooth.
Pour into a glass and enjoy.
Red Bean & Rich Matcha Two-Tone Latte
Ingredients:
Matcha powder: 1.7g (0.06oz)
Sugar: 8.5g (0.3oz)
Milk: 150ml (5oz)
Sweetened azuki beans: 3 tablespoons
Kinako (roasted soybean flour): to taste
Instructions:
Warm 150ml of milk. Froth 50ml using a milk frother and set aside.
In a separate container, mix the matcha powder and sugar with 100ml of the warmed milk until well combined.
In a cup, place the sweetened azuki beans at the bottom, then pour the matcha milk mixture over them. Top with the frothed milk and sprinkle with kinako.
Matcha Milk with Creamed Kinako
Ingredients:
Vanilla ice cream: 50g (1.76oz)
Kinako (roasted soybean flour): 5g (0.18oz)
Matcha powder: 2.3g (0.08oz)
Sugar: 11.5g (0.4oz)
Milk: 50ml (1.7oz)
Kuromitsu (black sugar syrup): to taste
Instructions:
Gently mix the kinako with the vanilla ice cream.
Dissolve the matcha powder and sugar in the milk.
In a glass, place the ice cream mixture in the center, piling it high. Pour the matcha milk over the top. Finish by drizzling with kuromitsu to taste.
Chilled Matcha Apple
Ingredients:
Matcha powder: 1.5g (0.05oz)
Apple juice: 120ml (4oz)

Ingredients:
Makes 12 Truffles
Matcha powder: 2.5g (0.09oz) + additional for coating
White chocolate: 100g (3.5oz)
Heavy cream: 50ml (1.7oz)
Instructions:
Place the chopped white chocolate in a bowl and melt it over a double boiler.
Warm the heavy cream and mix it with the matcha powder until smooth, using a rubber spatula to eliminate any lumps.
Pour the mixture into a tray, chill in the refrigerator for about an hour until firm, then cut into 12 pieces and roll them into balls.

Put the milk, yogurt, frozen banana, and matcha in a blender and mix.
