Ingredients: Makes 6 Ramekins Matcha powder: 6g (0.21oz) Milk: 400ml (13.5oz) Honey: 80g (2.8oz) (Granulated sugar can be used as a substitute) Gelatin powder: 5g (0.18oz) For a richer flavor, you can replace half of the milk with heavy cream. Instructions: Soak the gelatin powder in a small amount of milk (taken from the 400ml). In a microwave-safe container, combine the matcha powder, remaining milk, honey, and soaked gelatin. Ingredients: Vanilla ice cream: 50g (1.76oz) Kinako (roasted soybean flour): 5g (0.18oz) Matcha powder: 2.3g (0.08oz) Sugar: 11.5g (0.4oz) Milk: 50ml (1.7oz) Kuromitsu (black sugar syrup): to taste Instructions: Gently mix the kinako with the vanilla ice cream. Dissolve the matcha powder and sugar in the milk. In a glass, place the ice cream mixture in the center, piling it high. Pour the matcha milk over the top. Finish by drizzling with kuromitsu to taste.

Ingredients: Makes 12 Truffles Matcha powder: 2.5g (0.09oz) + additional for coating White chocolate: 100g (3.5oz) Heavy cream: 50ml (1.7oz) Instructions: Place the chopped white chocolate in a bowl and melt it over a double boiler. Warm the heavy cream and mix it with the matcha powder until smooth, using a rubber spatula to eliminate any lumps. Pour the mixture into a tray, chill in the refrigerator for about an hour until firm, then cut into 12 pieces and roll them into balls. Finish by dusting the truffles with matcha powder, and they’re ready to serve.
